Maple Glaze
- pure maple syrup
- whole grain mustard
- crushed red pepper flakes
- small pinch of kosher salt
Salmon
- small salmon fillets (about 100g each / 400g total), skinless
- Black pepper, to taste
- fresh lemon juice

Preheat oven to 425°F. Position one rack in the upper third of the oven for broiling later.

Whisk together the maple syrup, whole grain mustard, red pepper flakes, and a pinch of salt until smooth.

Pat the salmon fillets dry with paper towels and arrange on a foil-lined sheet pan, spacing them apart. Season generously with black pepper and drizzle with lemon juice.

Spread the glaze evenly over the tops of all four fillets.

Bake at 425°F for 8–10 minutes, until the salmon is nearly cooked through and reads about 135°F internally.

Switch the oven to broil on high. Broil for 2–3 minutes until the glaze is caramelized and bubbling and the salmon reaches an internal temperature of 145°F. Watch closely — the glaze can burn quickly. Serve immediately.
